Named for their resemblance to Beluga caviar, black lentils have a rich, nutty flavor, and many cooks consider them the best lentil around. They have thicker shells than most lentils, so they hold their shape when cooked instead of turning into a mush.
Full of protein, fiber, calcium, iron, and potassium, they’re also loaded with anthocyanins, a type of antioxidant in blue and dark purple foods.
Black lentils are extremely versatile - great in salads but you can also puree them for a smooth, creamy consistency in soups, stews, dips, and pastes. They have a mild, earthy taste and easily absorb flavors from spices, herbs, and vinegars. Try heaping them over sweet potatoes and topping with sour cream, or add them to tacos, tex-mex casseroles, and burgers. You can even use them to make vegan brownies if you’re feeling creative!
Cooking time for black lentils is a bit longer than some varieties, but still fast enough for a quick meal when you’re pressed for time. Plan on around 30 minutes (40 if you prefer a mushier consistency).

Lentils are grown in rotation with wheat and or barley on the same farm ground. Since lentils and wheat are similar in size, trace amounts of wheat may be found in our lentils.
Directions
Use 3 cups liquid (water, or stock of your choice) to 1 cup dry lentils. Be sure to use a large enough saucepan, as lentils will double or triple in size. Bring to a boil, cover tightly, reduce heat, and simmer until tender. Cooking time is typically 30–40 minutes.
