Cashews, Raw Whole Organic

Organic cashews are kidney shaped seeds of the cashew apple (the fruit of the cashew tree). Cashews are rich with antioxidants. They also have a lower fat content than most other nuts, and the majority of the fat content (oleic acid) is the same heart-healthy monounsaturated fat found in olive oil. Studies show that oleic acid promotes good cardiovascular health and reduces the risk of heart disease.

All raw nuts sold by Azure are considered to be bulk ingredients that will be subject to further processing and/or packaging. Ingredients that are processed and non-processed (raw) are not intended for consumption until the customer has conducted a thorough hazard analysis.

Based on a hazard analysis there are the potential biological hazards of spore-forming and non-spore-forming pathogens, such as salmonella, within raw ingredients that have not been provided a validated kill step. Even with a clean certificate of analysis from the supplier we cannot guarantee the absence of the biological hazards listed in raw ingredients. It is the customer’s responsibility that the biological hazard is prevented with the controlled validated kill step and/or preventive control deemed necessary from their hazard analysis.

We are issuing this notice so you will be aware of the potential presence of hazards in all ingredients, processed and raw. It is the customer’s responsibility to determine the likelihood of the biological hazards listed above by preforming their own hazard analysis, along with any other potential hazards. From the customers hazard analysis you will be responsible for implementing a validated kill step or any other preventive control.
