Azure Market Organics mung beans, also known as Chinese bean sprouts, are small, plump, and range from bright green to a dusky olive. You can cook them whole like other beans, but they really shine when sprouted—in fact, they’re second only to alfalfa in terms of popularity among home growers. Mung bean sprouts make a fantastic snack! Not only is the bean sprout much easier to digest than the actual bean, but it’s the only source of Vitamin C and Vitamin B12 among the sprouted beans.
Our organic mung beans have a refreshing and crisp flavor with a touch of sweetness. They’re a popular ingredient in many Eastern cuisines—especially in desserts such as green bean soup. Try adding them to stir fries, soups, and salads—or, if you’re looking to try something new, they can be extracted to make jellies and transparent noodles, and even used in a batter to make crepes.
When sprouting mung beans, follow the sprouting instructions, but place the beans in a flat container or sprouter, cover with a clean cloth, and place a heavy object such as a brick on top. This will produce stout, thick roots.
No soaking necessary before cooking. Please sort and rinse thoroughly before cooking.

Directions
Rinse in cool water. Place 1 cup beans in medium-sized pot with 3 cups water. Bring water to a boil, then reduce temperature to medium-low and cook until tender (about 25 minutes). Keep beans covered while cooking. If water level reduces, add water. 1 cup dry beans makes 3 ½ cups cooked beans.
