Polenta has long been popular in Italian and other European cuisine, but it’s now gaining fans in America as well. It’s made from coarse ground corn boiled in water to create a porridge, which you can top and serve immediately for a warm corn side dish. Or, you can spread the porridge in a pan and refrigerate it until it sets, then cut it into squares to bake, grill or fry. Directions
Yellow grits: Boil 2 cups water and ¼ tsp salt. Gradually stir in ⅔ cup corn grits. Reduce heat, cover, and simmer 5–10 minutes. Serve hot with butter, cheddar cheese, fruit sauce, vegetable gravy, or natural sweetener. Hot grits can be poured into a loaf pan, cooled, and sliced. Serve as is, or try oven roasting or griddling in a frying pan.
