Did you know that navy beans got their name because the US Navy has served them since the 1800s? Another fun fact: They are the key ingredient in Senate Bean Soup, which is served every day in the US Senate’s dining room. They are also known as Boston, Yankee and haricot beans.
Navy beans are a source of many nutrients, including protein, fiber, iron, vitamins B1 and B9 (thiamine and folate), magnesium, and manganese. They have a mild flavor and dense, smooth texture which makes them perfect for baked beans and soups like minestrone soup.

Directions
For 2 cups beans, add 10 cups hot water. Boil 2–3 minutes. Remove from heat, cover, and set aside for one hour, and up to four hours or more. Discard soak water. Place soaked, rinsed, and drained beans in a large saucepan with fresh hot water. Water should cover beans by about 1 inch. Add 1 Tbsp cooking oil, butter, or olive oil to reduce foaming and boil-overs. Boil for 10 minutes, then simmer for 1–2 hours.
